Simple Summer Broccoli Soup

Here’s a refreshing summer cold broccoli soup recipe that you’ll love.

This surprisingly delicious broccoli soup is served cold, and it is amazing for your health. It’s great as an appetizer or lunch side.

With just six ingredients, there’s no cooking involved! Just blending.

The broccoli soup recipe does call for cashews, so it isn’t fat-free. However, you can omit these for a fat-free soup.

This is an amazing way to get more broccoli into your diet. Broccoli is an incredible source of calcium. Broccoli is an amazing vegetable, but more on that later!

Cold Broccoli Soup

Ingredients

  • 1 extra large head broccoli, chopped
  • 2 cups vegetable stock
  • 1 medium apple, core removed
  • 1 juice of lemon
  • 1/4 cup cashews (omit for a fat-free soup)
  • 1/2 tsp sea salt

Instructions

1. Steam broccoli until soft, about 15 minutes.

2. Allow the broccoli to cool and then add to the blender.

3. Add all remaining ingredients to the blender.

4. Blend until smooth.

What are the Health Benefits of Broccoli?

Broccoli is a cruciferous vegetable, well known to prevent a variety of cancers, such as breast, uterine, ovarian, cervical & brain cancer.

Crucifers are rich in sulfur which is crucial for numerous functions, including antioxidant activity, in the body.

Broccoli is one of nature’s multivitamins. It has nutrients to support every organ & system in the body.

Do be in fear of eating broccoli (or any other crucifer), because of the trend in calling them ‘goitrogens’. You’d have to eat 100 pounds of raw broccoli every day to negatively affect the thyroid.

Broccoli is actually very healing to the thyroid and helps protect it from radiation.
