Here is a simple summer salad recipe that is light, quick, and delicious. It’s even better when paired with my lemon vinaigrette!
This summer salad recipe is healthy, quick, and easy. With just a few ingredients, some simple chopping, and a great dressing, this salad is perfect for lunch, dinner, cookouts, or a side salad.
Feel free to add more vegetables if you’d like.
However, this pairing is absolutely delicious.
You can use any kind of mixed greens – lettuce (baby, butter, bibb), romaine, spinach, or arugula.
When you eat a variety of greens, you then receive a variety of minerals and nutrients, as each type of leafy green is a powerhouse of its own. It is optimal if you can cycle as many types of leafy greens as you can into your diet over the course of a week or two.
- 1 cup mixed greens
- 3 sprigs cilantro
- 8 grape tomatoes halved
- 1/4 cucumber sliced
- 1 radish sliced
This salad is delicious when paired with Lemon Vinaigrette!
