I ate this salad for weeks on end when I first started transitioning to a fully plant based diet with minimal grains. This salad is so satisfying. It will not leave you hungry! It pairs incredibly well with my Garlic Tahini Dressing. Enjoy!
- 6 cups greens
- 6 stalks raw asparagus, chopped
- 1-2 scallions, chopped
- 1/2 English cucumber, chopped
- 1 small-medium sweet potato, steamed, chopped
- 3 dates, chopped
- 10 grape tomatoes, halved
- 1/2 cup sprouts
Combine all ingredients in a large bowl, top with dressing, & enjoy!
