Move over oily pesto (which I used to love, but after following a low fat plant-based diet, it doesn't make me feel good). This pesto is light & refreshing without all the fat. It's so good on grilled vegetables or seared cauliflower! 

Ingredients

  • 8 Stalks asparagus
  • 1 cup spinach, fresh, raw
  • 2 Tbsp basil, fresh, raw
  • 1/2 cup sprouts
  • 2 cloves garlic
  • 2 Tbsp lemon juice, fresh squeezed
  • 1 Tbsp water
  • 1 Tbsp raw honey
  • 1/8 tsp salt
  • 1/2 Tbsp olive oil omit for a fat free version

Instructions

  1. Add all ingredients into a blender or food processor.

  2. Blend until ingredients are finely chopped.
