Crispy Oil Free Roasted Potatoes

Many people mistakenly think potatoes are not a healthy food. That couldn’t be further from the truth! Potatoes are loaded with potassium, B6, and trace minerals. Potatoes can help heal hypo- or hyperthyroidism, inflammation, brain fog, troubled sleep, anxiety, and digestive inflammation. They’re also a great alternative if you’re trying to lower your grain intake.

Using parchment paper to bake potatoes prevents sticking to the pan with no oil required. It also makes clean up a breeze! You’ll be surprised at how crispy your potatoes can get with no oil whatsoever.

Ingredients

  • 6 medium potatoes (You can use any variety, but Russet's will come out the crispiest.)

Instructions

  1. Preheat the oven to 375 degrees. 

  2. Wash the potatoes. Cut into ½ inch thick slices. 

  3. Cover a baking sheet with parchment paper. Lay the potatoes onto the parchment paper in a single layer. 

  4. Bake at 425 for 20-25 minutes. 

  5. Then turn the potatoes once the bottom is golden brown. 

  6. Bake for an additional 10-15 minutes or until the bottom of the potato is golden brown. 

  7. For crispier potatoes, cut them thinner and bake a little longer. 

  8. For softer potatoes, cut them thicker and bake for less time.
