Cold Broccoli Soup

A refreshing summer soup that is surprisingly delicious served cold.

Ingredients

  • 1 extra large head broccoli, chopped
  • 2 cups vegetable stock
  • 1 medium apple, core removed
  • 1 juice of lemon
  • 1/4 cup cashews (omit for a fat-free soup)
  • 1/2 tsp sea salt

Instructions

  1. Steam broccoli until soft, about 15 minutes

  2. Allow broccoli to cool and then add to blender.

  3. Add all remaining ingredients to blender.

  4. Blend until smooth.

Broccoli is a cruciferous vegetable, well known to prevent a variety of cancers, such as breast, uterine, ovarian, cervical & brain cancer. Crucifers are rich in sulfur which is crucial for numerous functions, including antioxidant activity, in the body.

Broccoli is one of nature's multivitamins. It has nutrients to support every organ & system in the body.

Do not fear eating broccoli (or any other crucifer), because of the trend in calling them 'goitrogens'. You'd have to eat 100 pounds of raw broccoli everyday to negatively effect the thyroid. Broccoli is actually very healing to the thyroid and helps protect it from radiation.
