How to Make this Simple & Nourishing Sweet Potato Salad

Here’s how to make a simple & delicious sweet potato salad.

When I first started to transition to a fully plant-based diet with minimal grains, I ate this salad for weeks on end.

There is something about this salad that is so satisfying and nourishing. The flavors in this salad are perfectly balanced to give you sweetness with little spice from the green onions.

Sometimes when eating plant-based, you find yourself hungry right after you finish eating. That can feel so frustrating because it sends you right back to the kitchen.

That will not happen with this sweet potato salad. You’ll feel completely satisfied.

For the leafy greens, you can use any type of leafy green that you like. That includes butter lettuce, romaine, spinach, kale, or any kind of mixed greens that you like.

The sweet potatoes are especially healing and when paired with the dates, it creates a really nourishing and delicious combination. To make it even heartier, you can add more dates if you like.

It pairs incredibly well with my Garlic Tahini Dressing. Enjoy!

Make this Simple Sweet Potato Salad

Sweet Potato Salad

Ingredients

  • 6 cups greens
  • 6 stalks raw asparagus, chopped
  • 1-2 scallions, chopped
  • 1/2 English cucumber, chopped
  • 1 small-medium sweet potato, steamed, chopped
  • 3 dates, chopped
  • 10 grape tomatoes, halved
  • 1/2 cup sprouts

Instructions

1. Combine all ingredients in a large bowl, top with dressing, & enjoy!
