Easy Pad Thai that is Vegan & Gluten-Free

This gluten-free vegan Pad Thai recipe is delicious and so healthy!

This Pad Thai recipe is absolutely delicious, and it is the perfect healthy alternative to the traditional dish. It is gluten-free, egg-free, peanut-free, and vegan.

Pad Thai is a stir-fried rice noodle dish that is commonly served in Thailand. Traditional dishes can have meat or tofu, peanuts, egg, bean sprouts, and other vegetables. However, Pad Thai is usually the most unhealthy option at a restaurant, due to the sodium and fat levels.

This gluten-free vegan Pad Thai recipe is one of the easiest and tastiest, especially if you are craving an extra special dish.

I used rice noodles to keep the dish gluten-free. Additionally, I used coconut aminos in place of soy sauce. Needless to say, this Pad Thai is ridiculously healthy. The maple syrup gives it a hint of sweetness.

The pad thai is sweet, savory, but also tangy and made from the freshest and simplest ingredients.

Ingredients

  • 1/2 head broccoli, cut into small florets
  • 1 red pepper, sliced
  • 1/2 sweet onion, sliced
  • 1 cup mushrooms, sliced
  • 1 package rice noodles (optional, substitute a steamed sweet potato to go grain free)
  • 1/2 cup coconut aminos (Coconut Secret brand is my favorite!)
  • 1/4 cup lime juice, fresh squeezed
  • 1 tsp garlic powder
  • 1/4 cup fresh cilantro, chopped (or sub 1/2 tsp dried cilantro)
  • 1 tsp maple syrup
  • 1/8 tsp cayenne (optional, omit if you don't like spicy)
  • 3 scallions, chopped

Instructions

1. Lightly steam the vegetables. My suggested veggies are above, but you can use almost any kind of vegetable. This is a great recipe for using up whatever vegetables you have left in your fridge.
2. Cook the rice noodles according the directions on the package. Omit the rice noodles to make this a grain free recipe.
3. Mix the coconut aminos, lime juice, garlic powder, cilantro, maple syrup, and cayenne in a bowl.
4. Place the rice noodles (or sweet potato) on a plate. Top with steamed veggies. Dress with the coconut aminos mixture. Top with fresh scallions and enjoy!

What is coconut aminos?

It is a gluten-free, soy-free, non-GMO substitute for soy sauce. You can find it most grocery stores, or you can order it here on Amazon. You can use coconut aminos as a dressing, marinade, saute, or with sushi.

Is pad thai gluten-free?

As long as rice noodles are used, then your Pad Thai is gluten-free. If you are looking for grain-free, you can serve the mixture over a steamed sweet potato.
