Kale Chickpea Salad
This kale chickpea salad is absolutely amazing!
First, it’s packed with vitamins, minerals, and other nutrients.
Then, the addition of chickpeas makes it hearty and even tastier.
Additionally, if you want to add more calories, you can add dates, sweet potatoes, or even squash. Also, did I mention that this pairs perfectly with my garlic tahini dressing?!

This recipe also includes cucumbers, red onions, garlic powder, and a tad of salt. If you have a favorite vegetable, you can toss that on it!

- 4 cups kale massaged
- 1/4 cup chickpeas
- 1/2 cup cucumber, chopped
- 2 Tbsp red onion, chopped
- 1/4 tsp garlic powder
- 1/4 tsp Salt
Add in dates, sweet potatoes, or winter squash if you need more calories or need to feel more full.
